In an effort to reduce my waste more in 2019, my first focus is decreasing waste in the kitchen and with food in general. Once I started paying attention to all the unnecessary packaging and plastic our food comes in, I realized how easy it is to make some of my most commonly purchased packaged products like…snack bars! I’ve long been a fan of snack bars, especially ones made with real ingredients like nuts, whole oats, and dried fruit. KIND Bars and Rx Bars are my personal favorite, but they’re all individually wrapped and can really add up ($$) if you’re eating them a few times a week!
So, I finally decided to make my own bars and, WOW, total game-changer. I can now make a weeks worth of breakfast / snack bars for under $10, and store them in Stasher bags to keep them fresh and portable for the whole week. No plastic, no $4 price-tag per bar, and, I feel so much better knowing that every single ingredient is a whole food with minimal processing.
These are super hearty and filling, made with some of my current faves – goji berries for antioxidants, chia and flax seeds for omega-3, pumpkin seeds for magnesium, whole oats for fiber, and almond butter for flavor and more healthy fats. Plus a touch of honey for sweetness. One of these, plus my Bulletproof Coffee, is quickly turning into my favorite breakfast routine on a busy morning. Hope you enjoy!
- 1 cup almond butter
- 1 ½ cup rolled oats
- ¼ cup honey
- ¼ cup pumpkin seeds
- ¼ cup dried goji berries
- 1 tbsp chia seeds
- 1 tbsp flax seeds
- ½ tsp ground cinnamon
- Line a baking dish with wax paper
- In a large bowl, mix all ingredients until formed into a thick dough
- Press the mixture firmly into baking dish, using a spatula or your fingers to spread it out evenly
- Refrigerate for 2 hours
- Cut evenly into rectangles and enjoy!
