What could possibly be more fun than pizza night? How about pizza night with all the fresh end-of-summer vegetables on toast instead of pizza dough?! I always love pizza night at home, but sometimes the extra step of making or thawing pizza dough stands in the way of me and pizza for dinner. Enter: pizza toasts!
With the new Udi’s Delicious Gluten Free Sandwich Bread, these pizza toasts could not be easier to make on a busy weeknight. Plus, the whole family can get involved and make their own pizza toasts loaded with their favorite toppings. Just prepare an assortment of seasonal veggies like zucchini, onions, mushrooms, tomatoes, and herbs, and let everyone make their own!
These also make for great appetizers or party snacks if you’re entertaining, especially since football season is just around the corner. Hope you enjoy and share what your favorite veggie toppings are in the comments!
- 8 slices Udi’s Gluten Free Delicious Multigrain Sandwich Bread
- 1 jar of pizza sauce
- 3 oz parmesan cheese
- 1 zucchini, sliced and quartered
- 3 oz of small crimini or baby bella mushrooms, sliced
- 1 Cherry tomatoes, washed and cut in half
- 1 red onion, sliced thinly
- Handful of basil, washed and dried
- Preheat oven to 450 degrees
- Line baking sheet with parchment, or preheat pizza stone in oven
- Lay out 8 slices of Udi’s Gluten Free Delicious Sandwich Bread, drizzle with olive oil
- Spread pizza sauce on toasts
- Sprinkle with parmesan cheese
- Add vegetable toppings as desired
- Bake in the oven for 5-10 minutes, until cheese is melted and vegetables are cooked
- Cut each pizza toast in half and serve warm with a basil garnish
