Udi's Gluten Free End-of-Summer Veggie Pizza Toasts

More fun than regular pizza night, these pizza toasts are perfect for a busy weeknight. The whole family can get involved and make their own pizza toasts loaded with their favorite veggie toppings!
Ingredients
  • 8 slices Udi’s Gluten Free Delicious Multigrain Sandwich Bread
  • 1 jar of pizza sauce
  • 3 oz parmesan cheese
  • 1 zucchini, sliced and quartered
  • 3 oz of small crimini or baby bella mushrooms, sliced
  • 1 Cherry tomatoes, washed and cut in half
  • 1 red onion, sliced thinly
  • Handful of basil, washed and dried
Instructions
  1. Preheat oven to 450 degrees
  2. Line baking sheet with parchment, or preheat pizza stone in oven
  3. Lay out 8 slices of Udi’s Gluten Free Delicious Sandwich Bread, drizzle with olive oil
  4. Spread pizza sauce on toasts
  5. Sprinkle with parmesan cheese
  6. Add vegetable toppings as desired
  7. Bake in the oven for 5-10 minutes, until cheese is melted and vegetables are cooked
  8. Cut each pizza toast in half and serve warm with a basil garnish
