Happy first day of spring! While it may not feel like spring outside yet (hello, snowstorm in NYC!), I’m forever an optimist and am holding out hope it’s just around the corner. In the meantime, you can find me enjoying the snow day tomorrow by making these tasty morsels. Who needs flowers blooming outside when you have rose petals in your chocolate?

Dark Chocolate Rose Petal Bites

Serves: 10 chocolates
Ingredients
- 2 bars eating evolved chocolate
- 1 tbsp rose petals
- 1 tbsp coconut flakes
- 1 tbsp pistachios, roughly chopped
Instructions
- Line a baking sheet with wax paper or parchment paper
- Melt chocolate in a saucepan over low heat, or in the microwave for 2 minutes, stirring every 30 seconds until melted
- Using a tablespoon, drizzle melted chocolate into large disks on lined baking sheet, careful to space them so none of them touch
- Sprinkle with rose petals, coconut flakes and pistachios
- Place in the refrigerator for at least an hour, serve chilled
