Easy Sheet Pan Salmon with Roasted Fennel and Fingerling Potatoes

Ingredients
  • 8oz of Kvaroy Arctic Salmon
  • One Fennel bulb, washed and cut into ¼” slices
  • 1 pound of fingerling potatoes, washed and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons Herbs de Provence seasoning
Instructions
  1. Preheat oven or air fryer to 350 degrees
  2. Add the diced potatoes and sliced fennel to a parchment-lined baking sheet, drizzle with olive oil, salt and pepper
  3. Place in the oven and bake for 20 minutes
  4. While the veggies roast, rinse and dry salmon
  5. Brush salmon with olive oil, then season with salt, pepper, and Herbs de Provence seasoning
  6. Remove baking sheet from oven, add salmon and return to oven
  7. Bake for an additional 20 minutes, until salmon is done
  8. Remove from the oven, plate, and enjoy warm!
Notes
You can also add the salmon at the beginning and remove after 20 minutes, letting the salmon rest while the veggies continue to cook to your desired texture.
