Meatless Monday doesn’t mean you can’t have steak. Especially when your “steak” is a juicy, tender piece of cauliflower drenched in turmeric and spices. Do I have your attention now? This whole roasted cauliflower, cut into steaks, is always on my meatless Monday menu, with a side of greens and a whole grain. It’s a simple recipe with minimal ingredients that allows you to seriously multitask while cooking. Just prep it, pop it in the oven and check off some other to-do’s while it roasts for 45 minutes and voilà!
Whole Roasted Turmeric Cauliflower

Looking for a meatless Monday dish? These juicy, tender cauliflower "steaks" are drenched in turmeric and spices and pair perfectly with your favorite green and whole grain for a complete plant-based meal.
Ingredients
- 1 head of cauliflower
- 1 tbsp avocado oil
- 1 tsp turmeric
- ½ tsp taragon
- ½ tsp thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400
- Rinse and dry cauliflower heat
- Cut off bottom stem and any surrounding green leaves
- Place bottom into dutch oven or baking pan
- Drizzle with avocado oil, distributing evenly with a brush or fork
- Sprinkle with salt, pepper, turmeric, tarragon and thyme
- Bake in oven for 35 minutes with lid or aluminum cover
- Remove lid and bake for 10 more minutes, until browned
- Cut into “steaks” and serve with your favorite side dish
